Instant Pot Poached Eggs over Avocado Toast

Ingredients

  • 3-4 large eggs

  • 1 cup water

  • 1 avocado

  • 3-4 slices of your favorite toast

  • 1/2 tsp Everything But the Bagel Seasoning (Optional)

  • 1/2 tsp Nutritional yeast (Optional)

  • Or, use 1/4 tsp of my House Seasoning

Directions

  • Pour 1 cup of water in the bottom of the Instant Pot (make sure the pot is in there!) Place trivet or egg trivet in pot.
  • Spray silicone egg cups with nonstick spray, and place in the trivet.
  • Crack 1 egg in each cup.
  • Close lid, lock, and use high pressure setting. Set for 2 minutes, and press Start.
  • Mash avocado in a bowl, and season as desired. I use Paula Deen’s seasoning recipe. It’s salt, pepper, onion salt, and garlic salt. You could also use Everything But the Bagel Seasoning and/or Nutritional yeast to the mashed avocado, or just put it on top if desired. They’re completely optional, but I like to add them for more flavor and nutrients.
  • After the cook time has ended and the Pot beeps, hit cancel, and immediately release the pressure.
  • Wait one minute with lid still on if you want it to be like thick lava as in the photo.I cook my toast at this time.
  • (If you like your eggs cooked more than in the photo, you could let them sit for 2 minutes before releasing the pressure, or cook for 3 minutes instead of 2.)
  • Spread toast with mashed avocado, add Everything But the Bagel seasoning and nutritional yeast on top if desired. Using a spoon to release egg from the silicone cup, place egg flat side down on the toast.
  • Enjoy immediately!
