1 tsp red wine vinegar
1 tsp lemon juice
1/4 cup vegetable broth
1/2 tsp dried oregano
1 clove garlic, or 1/2 tsp garlic powder
1/2 onion thinly sliced
2/3 lb boneless skinless chicken thighs
Directions
- Combine all ingredients in the slow cooker, and toss to coat.
- Cook on low for 6-8 hours, or 4-6 on high
- Shred chicken, and place on a baking sheet. Bake at 400, until the chicken begins to brown and get crisp. (About 5-10 minutes)
- Return the chicken to the crockpot and the juices, and stir. Serve on pita bread or with roasted tomatoes.
