1/2 cup seasoned ground turkey or beef
1 tsp taco seasoning
1/2 cup cottage cheese
1/4 cup black beans
1/4 cup corn kernels
1/4 cup salsa
1/4 cup shredded cheddar cheese
1/2 avocado, sliced
1 lime wedge
Fresh cilantro
Directions
- Brown the ground turkey or beef in a skillet, add 1 tsp taco seasoning and 3 tabelspoons water. Stir to simmer. Remove from heat.
- In a bowl, layer cottage cheese, cooked ground turkey, black beans, corn, and salsa.
- Sprinkle with shredded cheese and top with avocado slices and cilantro.
- Squeeze lime juice over the top and serve immediately.
